The CARRET family has lived in the commune of Vaux en Beaujolais (Clochemerle) for several generations. Jean-Claude CARRET’s ancestors farmed the estate in mixed farming. In the 1970s, his father decided to devote himself solely to the cultivation of vines.
The vines of the domain were renewed for a third between 1995 and 1999. Two thirds of the vineyard are considered old vines (over 40 years old). The slopes and the exposure make the particularity of this domain. The vines are in gobelet, on slopes of 30 to 40%. The work is therefore more difficult than on the plain.
The yields are 40 hl/hectare.
The harvest is manual.
Vinification: maceration for 6 to 8 days, temperature control during the whole fermentation process.
